Hello everyone and happy Sunday. I can’t believe it’s already February. Lately I have been extremely busy and sometimes when life gets a bit too busy or overwhelming it’s good to slow down and make something delicious you can enjoy while watching TV or something you can serve for your guest if they decide to stop by unexpectedly. So today I will share with you an easy and quick recipe you can make during winter months. These easy sweets are called Runeberg cakes and they are really easy to make and take about 30 minutes to make. They are named after Finlands national poet J. L. Runeberg because it’s said that his wife created the recipe and made them to him when he was craving for something sweet but there wasn’t anything ready at the house. The cakes are traditionally eaten in the beginning of February and we also have a day dedicated to him: the 5th of February. Dough 14 cupcakes

 200g butter or margarine
 1dl sugar
 1dl brown sugar
 2 eggs
 1 ½ dl crushed gingerbread
 1 ½ dl flour
 1dl crushed almonds
 1 ½ tbs baking powder
 1dl milk or cream

Toppings
 Raspberry jam
 ½-1 tbs Lemon juice
 1dl Icing sugar

Whisk the soft butter, sugar and brown sugar together. Then add the room temperature eggs separately to the foam. Mix the dry ingredients together and add them to the dough. Add milk. Whisk all of them together.

Use two spoons to lift the dough to muffin tins and make sure that they all have equal amount of the dough so they will cook evenly. Set your oven to 200 Celsius and bake the cakes for about 20-25 minutes.


After you have taken them out of the oven mix the lemon juice and icing sugar together. Then add the raspberry jam to the middle and add the frosting around the jam. Let them set for a while and then they are ready to be enjoyed with a cup of coffee.
